Recipe yields 8 turnovers
- 1 egg
- 1 tbsp water
- 2 sheets frozen puff pastry
- 1 tbsp poppy or sesame seeds
- Chicken, Gruyere & Pesto:
- 2 cups shredded chicken
- 1 cup shredded gruyere cheese
- ¾ cup pesto
- Ham, Cheese & Tomato:
- 2 cups diced ham
- 1 cup shredded cheddar
- 1 cup diced tomatoes
- Broccoli & Cheese:
- 2 cups cooked broccoli
- 1½ cups shredded cheddar
- Spinach, Artichoke & Feta:
- 2 cups cooked spinach
- 1 cup canned artichoke
- ¾ cup crumbled feta

Preheat oven to 400°F. Line a baking sheet with parchment paper or a Silpat baking mat. Separately, whisk together egg and water.

On a floured work surface, roll out puff pastry to a 13” square. Using a knife or pastry wheel, cut four equal squares. Fill a half diagonal of each with fillings of your choice, leaving edges clear. Brush all edges with egg wash and then fold over to form a triangle. Using fork tines, crimp the edges, making a small slit on top of each turnover. Brush tops with egg wash and sprinkle with poppy or sesame seeds, if using.

Transfer the turnovers to a prepared baking sheet and bake until golden brown, about 22-24 minutes.
