- 15 oz can of chickpeas
- 1 tbsp curry powder
- 2 tsp Kosher salt
- 2 tsp ground cumin
- 1 tsp smoked paprika
- ½ cup olive oil
- ½ head cauliflower
- 1 sweet potato
- 1 red onion
- 2 tsp chopped cilantro
- Vegan naan (optional)
- Lemony Yogurt Sauce:
- 1 cup plain non-dairy yogurt
- 1 tsp lemon zest
- 1 tbsp lemon juice
- ¼ tsp Kosher salt

Preheat oven to 400°F and line a baking sheet with parchment paper. Mix yogurt ingredients and set aside. Rinse and drain chickpeas and spread onto a plate. Blot dry to remove excess moisture.

Mix curry powder, salt, cumin, smoked paprika and olive oil. Add chickpeas, cauliflower, sweet potatoes and red onion, tossing to coat. Spread onto baking sheet and transfer to the oven. Roast veggies until fork-tender and golden brown.

To assemble, scoop oven-roasted chickpeas and vegetables into bowls. Sprinkle with cilantro and add a dollop of yogurt sauce to each. Serve with warmed naan.
