Recipe yields 10 individual pies
- Cherry Filling:
- 1 ½ cups cherries
- 3 tbsp sugar
- 2 tsp cornstarch
- Juice & zest of 1 lemon
- 1 egg
- 1 tbsp water
- Dough:
- 1 ½ cups flour
- ½ tsp salt
- 12 tbsp unsalted butter
- 3 tbsp cold water

Combine flour and salt in a food processor and pulse 3-4 times. Add butter, pulsing into small pieces, then add ice water and process dough. Shape into flat discs, wrap with plastic wrap and chill in the fridge.

Combine cherries, sugar, cornstarch, lemon juice and zest in a pan over medium-high heat. Stir continuously, bring to a soft boil and reduce heat to medium-low. Simmer until the mixture thickens and cherries soften.

Preheat oven to 400°F and line a baking sheet with parchment paper. Roll dough until it's ⅛-inch thick. Cut circles using a 3-inch round cookie cutter, transfer half to a baking sheet, and top with filling and remaining dough. Brush with egg wash, sprinkle with sugar and bake for about 20 minutes.
