Recipe yields 4 servings

  • 4 chicken breasts
  • 3 tbsp olive oil
  • Juice of 1 lemon
  • 1 tsp Kosher salt
  • ½ tsp ground black pepper
  • Chimichurri:
  • 2 cups cilantro
  • 1 cup parsley
  • 1 clove garlic
  • â…“ cup red wine vinegar
  • ½ tsp Kosher salt
  • ¼ tsp red chili flakes
  • ½ cup olive oil

directions

Finely chop parsley, cilantro and garlic, transferring it to a mixing bowl. Stir in red wine vinegar, chili flakes, salt & olive oil. Set aside at room temperature.

Turn your grill on to moderate heat. Combine chicken, olive oil, lemon juice, salt & pepper. Coat the grill with a non-stick spray and add chicken, allowing it to sit until grill marks appear. Flip once, until it’s opaque throughout and an instant-read thermometer reaches 165°F.

Drizzle chimichurri generously over chicken, serve and enjoy.
