Nothing says summer like a fruit cobbler and baking this beauty on the grill means you don’t have to turn your oven on during a hot summer day. You can use any fruit you want in this cobbler from berries to stone fruit such as plums, peaches and nectarines. Whenever you are using fruit, always taste it first. If the fruit is very sweet and ripe, you can cut back on the sugar. Likewise, if your fruit is sour, you may want to increase the sugar. If you're just learning how to make berry cobbler for the first time, this video will take you step by step so you're ready to serve this grilled treat at your next barbecue or backyard hangout.

PREP:

COOK:

YIELD:
6-8 servings
Ingredients
- 2 pounds strawberries, hulled and halved
- 2 pints blackberries
- ½ cup sugar, plus more for sprinkling
- 2 tablespoons cornstarch
- 1½ cups flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- 8 tablespoons (1 stick) very cold, unsalted butter, cut into small pieces
- ¾ cup very cold heavy cream, plus more for brushing
Directions
- Prepare a grill to medium-high heat, 400°F if your grill has a built in thermostat.
- In a mixing bowl, toss together the strawberries, blackberries, sugar and cornstarch. Transfer to a cast iron skillet and set aside.
- In the base of a food processor fitted with a metal blade, add the flour, baking powder and salt and pulse 3-4 times to combine. Add the butter and pulse several times, until the butter resembles tiny pebbles. With the machine running, add the cold cream in a slow steady stream and process until the dough comes together, about 15 seconds. Transfer the dough to a work surface and form into a 7-inch by 7-inch square. Cut the biscuits into nine equal squares and space them evenly on top of berries in the skillet. Brush the tops of the biscuits with heavy cream and sprinkle with sugar.
- Set the cobbler onto the grill and cover. Cook until biscuits are golden brown and the fruit is bubbly, about 30 minutes. Because every grill is different, start checking the cobbler at 20 minutes and then every 5 minutes thereafter. Cool slightly, top with ice cream if desired and serve.
