What is a Hollow Ground Knife?
A hollow ground knife features an extremely sharp edge created by grinding the sides of the blade into a symmetrical, concave shape. A hollow grind is especially useful for knives used to slice or skin food. However, because this type of blade is more narrow at the edge, it isn’t as durable for cutting through dense foods as other types of blades can be. Some hollow ground knives feature a scalloped pattern, while others are smooth.
