ingredients
- Vinaigrette Ingredients
- Juice of 2 lemons, about 4 ounces
- 3 tablespoons red wine vinegar
- 6 tablespoons olive oil
- 1 tablespoon dijon mustard
- 1 shallot, minced
- 2 cloves garlic, minced
- 1 teaspoon honey
- Salt and pepper
- Salad Ingredients
- 6 cups mixed greens
- 2 avocados, sliced
- 2 grapefruit, segmented
- 6 radishes, sliced thin
- ½ cup chives, chopped
- ½ bunch dill, chopped
- ½ cup pistachios, crushed
directions
- Whisk together the vinaigrette ingredients in a bowl and set aside.
- In a large bowl, toss together the mixed greens, avocados, grapefruit, radishes, chives and dill. Top with the crushed pistachios and serve dressed with the vinaigrette.

Leftover vinaigrette will last in the refrigerator for up to 5 days.
