To sauté the snap peas, add shallots and olive oil to a skillet. Heat, then add the snap peas and season with salt. Sautéeing the peas quickly at a high temperature will help them retain their bright green color, giving the salad it's beautiful hue. To use the mandoline, first cut your radishes into halves or quarters to create a flat edge. Place the flat edge on the mandoline and move the radish back and forth while applying equal pressure. Once you have sliced nearly all the way to the end, stop and eat or discard the leftover piece.
