Cut off the top and bottom. This will create a flat edge

Remove peel. Place citrus cut-side down. Using your
chef’s knife, cut off peel and pith, making sure all white
spots are removed.
Cut between citrus membranes. Hold citrus in your
hand. Cut between each membrane so that segments pop
out. *Do this step over a bowl to capture extra juice.
