- Turmeric Scallion Chicken Ingredients
- 1 teaspoon ground turmeric
- 2 teaspoons ground black peppercorns
- 1 teaspoon Kosher salt
- 2 teaspoons nutritional yeast
- 5 pounds chicken wings, patted dry
- 2 bunches scallions, cut in half
- 2 tablespoons soy sauce
- 1 tablespoon maple syrup
- 3 tablespoons ginger, finely grated
- 4 garlic cloves, finely grated
- 2 tablespoons neutral oil (grapeseed, avocado, canola or peanut oil)
- Charred Greens Ingredients
- 2 tablespoons neutral oil (grapeseed, avocado, canola or peanut oil)
- 1 teaspoon turmeric
- 1 teaspoon ground ginger
- Kosher salt
- 2 pounds bok choy, halved
- 1 lemon, zest and juice
- 1 tablespoon sesame seeds
directions
- For the chicken, mix together turmeric, paprika, peppercorns, salt and nutritional yeast in a mixing bowl. Arrange chicken wings on a prepared baking sheet. Sprinkle spice mixture over the chicken. In a separate bowl, mix scallions, soy sauce, maple syrup, ginger, garlic and oil. Then toss and drizzle over the wings. Let chicken sit at room temperature for at least 30 minutes. Place the baking sheet with chicken wings in a cold oven. Set oven to 450 degrees and bake until chicken is golden brown and green onions are charred, about 20–25 minutes. Transfer wings to a platter and serve with charred bok choy (see directions below).
- To make the charred bok choy, mix together oil, turmeric, ground ginger and salt to taste. Slice bok choy in half and brush with oil-and-spice mixture. In a grill pan or directly on a grill, cook bok choy cut side down for 3–5 minutes on medium-high heat until charred to your liking. Top with lemon juice, zest and sesame seeds.

Use a neutral oil that has very little or no flavor and a higher smoke point— grapeseed oil, avocado oil, canola oil, corn oil, peanut oil, refined coconut oil, refined olive oil, safflower oil, sunflower oil or vegetable oil.
