This simple cocktail comes together quickly using winter citrus and fresh rosemary. If you can’t find clementines you can use mandarins, tangerines, blood oranges or cara cara oranges. Any fresh citrus juice will be delicious! Use your best gin in this drink and add the club soda just before serving to keep the bubbles fresh.
ingredients
- ¼ cup fresh clementine juice, from about 2 clementines
- 1 ½ ounces gin
- Club soda
- Clementine slice, for garnish
- Rosemary sprig, for garnish
- Rosemary Simple Syrup
- ¼ cup sugar
- ¼ cup water
- 3 fresh rosemary sprigs
directions
- To make the rosemary simple syrup, place the sugar, water and rosemary sprigs in a small pot over medium heat. Swirl the pot a few times until the sugar is dissolved and then allow to simmer for 2 minutes. Turn the heat off and let the syrup steep for 30 minutes. Discard the rosemary sprigs.
- Fill a cocktail glass with ice. Add the clementine juice and gin and stir to combine. Top with club soda and garnish with a clementine slice and a rosemary sprig. Serve at once.

You can juice the clementines up to a day in advance.
Rosemary simple syrup can be made up to 5 days in advance and stored in the refrigerator.
