Homemade granola could not be easier, and the results are spectacular. You can use this pumpkin spice granola recipe as a base and change up the spices, nuts, seeds and dried fruit. Using a mortar and pestle with whole spices is the best way to get the most flavor. We especially love the addition of cardamom in this autumnal recipe.
ingredients
- 2 cups rolled oats
- ½ cup walnuts, broken into pieces
- ¼ cup shelled pumpkin seeds (pepitas)
- 1 tablespoon pumpkin pie spice
- 1 teaspoon kosher salt
- 2 cardamom pods
- ¼ cup coconut oil, melted
- â…“ cup honey
- ¼ cup almond butter
- 1 teaspoon pure vanilla extract
- ½ cup dried cherries
directions
- Preheat the oven to 300°F. Line a baking sheet with parchment paper.
- In a large mixing bowl, stir together the oats, walnuts, pumpkin seeds, pumpkin pie spice and salt. In a mortar and pestle, crush the cardamom pods until finely ground, discarding their papery shells. Add the cardamom to the oat mixture and combine. Set aside.
- In a stand mixer fitted with a paddle attachment, combine the coconut oil, honey, almond butter and vanilla.
- Pour the wet mixture into the bowl with the oat mixture to combine, then spread out in a thin layer on the prepared baking sheet.
- Bake for 10 minutes, then stir and spread out the oats again on the baking sheet. Continue baking until oats are lightly golden, about 15 more minutes. Allow the granola to cool completely on the pan and then, using your hands, break it up into clusters. Add the cherries and serve.

Be sure not to overcook the granola. You want to pull it from the oven when the oats are lightly golden. The granola will continue to cook, and harden, as it cools on the pan.
You can add any nuts you like in this pumpkin spice granola recipe, including almonds and pecans.
Other dried fruit options include apricots, blueberries and cranberries.
Store in an airtight container for up to 2 weeks.
