A fantastic lemon vinaigrette recipe is a versatile addition to your cooking arsenal. This lemon dijon dressing takes less than 5 minutes to make and will keep in your refrigerator for up to 10 days.
ingredients
- â…“ cup fresh lemon juice (about 2 lemons)
- 1 tablespoon Champagne or white wine vinegar
- 1 tablespoon Dijon mustard
- 2 teaspoons honey
- ½ teaspoon kosher salt
- ¼ teaspoon freshly ground black pepper
- ½ cup plus 2 tablespoons extra-virgin olive oil
directions
- In a small mixing bowl, stir together the lemon juice, vinegar, honey, salt and pepper.
- Slowly whisk in the olive oil until well combined.

The most important thing to making a great salad dressing is to use good-quality olive oil. You’ll really taste a difference! A full-bodied, extra-virgin olive oil will produce delicious results.
You can use any citrus for this recipe, including lemons, oranges, blood oranges, pomelos and grapefruit.
The addition of vinegar helps to really bring out the acidic flavors.
Dijon mustard and honey not only add terrific flavor and sweetness but they act as a thickening agent to help bind the dressing. If you want a vegan dressing, swap the honey for agave or maple syrup.
If the oil in your dressing solidifies in the refrigerator, just let it sit on the counter for 20 minutes or so and then whisk or shake it back together.
Try variations made with finely chopped shallots or garlic, chopped fresh tarragon, grainy mustard (in place of the Dijon mustard).
