- 3 ounces quality bittersweet chocolate

- Melt chocolate in a microwave for 30–45 seconds, or in a hot water bath (bain-marie). To melt in a hot water bath, bring a medium saucepan half-filled with water to a boil on the stove. Reduce to a simmer. Pour chocolate into a medium metal or glass bowl that covers the pan. You don’t want any steam getting into the chocolate. Stir until melted.
- Using an offset spatula, spread the chocolate evenly in a thin layer on the back side of a baking sheet.
- Place in the freezer for a few minutes.
- Line another baking sheet with parchment paper and chill in the fridge or freezer.
- After a few minutes, check if the chocolate is set.
- Next hold a flat metal spatula or bench scraper at a 45-degree angle and scrape from the bottom end of the pan towards you until a curl forms.
- Refrigerate if the chocolate gets too soft; if it’s too hard, let it come to room temperature.
- Place completed curls on the chilled baking sheet.
- Store in an airtight container in the fridge or freezer until needed.
