Homemade waffles are so worth the effort and they take very little time. Spice up your breakfast with this gingerbread version served with caramelized pears. Redolent with sweet spices, the gingerbread waffle can be made the day before. Sliced pears cooked in sugar and butter on a griddle pan make a delicious topping. Make sure your pears are ripe yet firm enough to hold their shape when cooked.
ingredients
- 1¾ cups all-purpose flour
- 3 tablespoons firmly packed dark brown sugar
- 1 tablespoon baking powder
- 1 tablespoon ground ginger
- 1½ teaspoon ground cinnamon
- ½ teaspoon kosher salt
- ¼ teaspoon ground cloves
- 1½ cups whole milk
- 2 large eggs
- ½ cup unsalted butter, melted
- 3 tablespoons dark molasses
- 1 teaspoon pure vanilla extract
- ½ cup pomegranate arils
- Warm pure maple syrup, for serving
- Griddled Pear Ingredients:
- 4 tablespoons unsalted butter
- 2 tablespoons dark brown sugar
- 3 small Bosc pears, cored and cut into ½-inch slices
directions
- To make the waffles, whisk together flour, brown sugar, baking powder, ground ginger, cinnamon, salt and cloves in a mixing bowl. Set aside.
- In a second mixing bowl, whisk together milk and eggs, and then stir in the butter, molasses and vanilla. Add the dry ingredients to the wet, and stir until completely combined.
- Heat a waffle iron and spray both sides with nonstick cooking spray. Pour batter (about ¾ cup) onto the hot waffle iron and cook until golden brown, 3 to 4 minutes. Continue until you have used all the waffle batter.
- To make the griddled pears, heat a griddle pan over medium high heat. Melt the butter and allow it to get bubbly hot, about 30 seconds after it is melted. Sprinkle the brown sugar over the butter, and lay pear slices on top. Let the pears cook, without moving them for 3 minutes. Using tongs, flip the pears and cook on the other side for 2 minutes. You can carefully push the pears around to sop up the brown sugar.
- To serve, place a waffle on a plate, top with griddled pears and pomegranate arils. Serve with maple syrup.
notes
For best results, make sure your waffle iron is fully preheated. If your waffles aren't turning golden brown, it probably means the iron isn’t hot enough.
Nonstick cooking spray will coat your waffle pan more evenly and thoroughly then brushing melted butter.
Pears will work beautifully during the fall and holiday season. This griddle technique also works well with summer’s stone fruit, such as peaches and apricots.
Griddled pears are also delicious served on pound cake or vanilla or coffee ice cream.
