Marinated Olives Two Ways with Whipped Feta

I'm making up for lost time as I didn't eat olives until my 30th birthday. What a shame. This duo of olives paired with the salty whipped feta is heavenly. Perfect for parties, all of the components of my marinated olives with whipped feta recipe can be prepped ahead of time so you aren't stressing when your guests arrive.

ingredients

  • Citrus Olives:
  • 2 cups Castelvetrano olives
  • Zest of 1 lemon
  • 4 tablespoons extra-virgin olive oil
  • 3 cloves garlic
  • ½ teaspoon red pepper flakes
  • 1 shallot, sliced
  • 2 sprigs of thyme
  • Spicy Olives:
  • 1 jalapeño
  • 1 bunch cilantro
  • 1 bunch parsley
  • 1 handful fresh spinach
  • ¼ cup roasted salted pistachios
  • 2 cloves garlic
  • ½ teaspoon ground cumin
  • Zest and juice of 1 lemon
  • 4 tablespoons extra-virgin olive oil
  • Water, as needed
  • 1 jar Castelvetrano olives
  • Whipped Feta:
  • 8 ounces feta
  • ¾ cup Greek yogurt
  • 1 tablespoon lemon zest
  • 2 tablespoons olive oil
  • Kosher salt and pepper to taste

Citrus Olives:

  1. Place the olives in a bowl with the lemon zest.
  2. In a small saucepan over medium high heat, combine the olive oil, whole garlic cloves, crushed red pepper flakes, sliced shallot and thyme. Cook until the garlic starts to sizzle, about 1–2 minutes, then reduce heat to low and continue to cook for 20 minutes. Remove pan from heat and let it steep for 1 hour. Pour oil mixture over olives and stir to coat. Marinate at room temperature for 3–4 hours, or cover and chill for up to 4 days. Bring to room temperature before serving.

Spicy Olives:

  1. Combine everything except the olives in a food processor and whirl for 2 minutes until smooth. Add a few teaspoons of water if you need to smooth it out—it should be a bit thinner than a pesto.
  2. Toss a few tablespoons of the spicy herb sauce with the olives and marinate for a few hours before serving.

Whipped Feta:

  1. In a food processor combine the feta, Greek yogurt, lemon zest and olive oil. Pulse to combine. Taste and adjust salt and pepper to your taste.

To Serve:

  1. Use a trio of bowls to present the citrus olives, spicy olives and whipped feta. Group the bowls on a platter or serving board to encourage dipping.
