summary
What could be better than waking up on Valentine’s Day to a giant chocolate chip pancake? This Lodge heart pan makes it super easy to cook pancakes all at once. Pancake toppings are endless: start with whipped cream and chocolate chips. For more variations, try omitting the chocolate chips and topping with sliced strawberries and powdered sugar; bananas, granola and honey; or even a savory edition with tomato, bacon and maple syrup.
ingredients
- 2 cups all-purpose flour
- 2 tablespoons granulated sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- ¼ teaspoon Kosher salt
- 1 ½ cups whole milk
- 2 large eggs
- 1 teaspoon pure vanilla extract
- ¼ cup plus 1 tablespoon melted butter, divided
- 1 cup semisweet chocolate chips
directions
- Preheat the oven to 350°F.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda and salt. In a second mixing bowl whisk together the milk and eggs and then stir them into the dry mixture. Stir in ¼ cup of melted butter until completely combined and then stir in the chocolate chips.
- Use a pastry brush to coat three heart-shaped Lodge pans with the remaining tablespoon of melted butter. Divide the pancake batter evenly among the three pans and transfer to the oven. Bake until the pancake is set, 10-12 minutes. Cool slightly and serve.
notes
More topping ideas: raspberries, strawberries, nectarines, peaches, slivered almonds.
If you only have one heart pan, you can bake them one at a time, just give each pancake about 10 minutes to cool in the pan before you flip it over onto a plate.
Pancake batter can also be cooked on a very well greased 12x17-inch sheet pan for about 20 minutes. Cool and cut into squares or use a heart cookie cutter.
