A frittata is a gluten-free and crustless quiche that is incredibly versatile, not to mention economical. It is a fantastic way to use up leftover ingredients and produce as the flavor combinations are endless. The really wonderful thing about a frittata is that it is the perfect dish for breakfast, lunch or dinner!
ingredients
- 8 large eggs
- ½ cup whole milk
- ½ teaspoon Kosher salt
- ¼ teaspoon ground black pepper
- 3 pieces of thick-cut bacon, cut into ½-inch pieces
- 1 leek, halved and thinly sliced (white and light green parts only)
- ½ pound Brussels sprouts, trimmed and shredded
- 1 tablespoon extra-virgin olive oil
- 2 tablespoons chopped fresh dill
- 2 ounces goat cheese
directions
- Preheat the oven to 400°F.
- In a large mixing bowl, whisk together the eggs, milk, salt and pepper. Set aside.
- Set a 10-inch ovenproof skillet over medium-high heat and add the bacon. Sauté, stirring often, until golden brown, about 5 minutes. Add the leek and sauté, stirring often, until golden brown, about 3 minutes. Add the Brussels sprouts and the olive oil and sauté, stirring occasionally, until the Brussels sprouts have turned golden brown, about 8 minutes. Carefully pour the egg mixture into the skillet. Sprinkle the frittata with the dill and dot with pieces of goat cheese.
- Transfer to the middle rack in the oven and bake until eggs are set, 16-18 minutes. Serve frittata warm or at room temperature
notes
Don’t worry if you don’t have exactly a 10” pan for this recipe. Just adjust the cooking time accordingly (less time in the oven for a bigger pan). If your pan is bigger than 12”, add 2 more eggs.
You can substitute goat cheese for any cheese, including Parmesan cheese, feta or shredded gouda.
To know if the eggs are set, carefully use your finger to press on the center of the frittata; it should spring back if set.
Fresh herbs like dill, tarragon and basil are also lovely on top of a cooked frittata.
Wonderful accompaniments to a frittata include sliced avocado, hot sauce and salsa.
