Perfect for holiday entertaining, this gluten-free almond cake recipe feeds a crowd. - 8 large eggs
- 2 cups sugar
- Zest of 2 small oranges
- 2 tablespoons orange liqueur, such as Cointreau or Grand Marnier (optional)
- 1½ teaspoons almond extract
- 4 cups almond flour
- 2 tablespoons powdered sugar (confectioner’s sugar)
directions
- Place an oven rack in the center position and preheat the oven to 350°F. Grease a baking dish with butter or nonstick cooking spray. Set aside.
- Put the eggs and sugar into a stand mixer fitted with a paddle attachment, and mix until well combined. Add the orange zest, orange liqueur if using and almond extract. and stir until combined. Add the almond flour and mix until just combined.
- Pour into the prepared cake pan, and transfer to the oven. Place the pan on the center rack and bake until golden brown and a toothpick comes out clean, about 55 minutes.
- Let the cake cool in the pan for 30 minutes, and then dust with powdered sugar.
- Slice and serve.

Since this cake is exceptionally moist, let it cool before slicing to let the cake firm up a bit.
If you skip the optional orange liqueur, add extra orange zest.
A great option for gluten-free guests as almond flour does not contain gluten.
