These delicious potatoes make a great side dish and they look beautiful as well! The air fryer is the perfect way to cook potatoes as it produces a wonderful crispy outside with a fluffy interior. Whenever you cook in the air fryer, you want to place food in a single layer so the air can flow all around. This will allow the food to “fry” and not steam.
ingredients
- 1 ½ lbs Russet potatoes, cut into 1-inch cubes
- 3 tablespoons extra-virgin olive oil
- 1 teaspoon Kosher salt
- ½ teaspoon ground black pepper
- ½ cup pesto
- ¼ cup freshly shredded Parmesan cheese
directions
- Preheat your Breville Smart Fryer to 400°F.
- Toss the potatoes with the olive oil, salt and pepper and then add, in a single layer, to the middle rack of the air fryer. Roast, stirring once, until potatoes are golden brown and fork-tender, 15-18 minutes. Transfer potatoes to a mixing bowl and toss with the pesto. Pour potatoes into a serving dish and top with the Parmesan cheese. Serve at once.
notes
It is imperative that you cut the potato cubes all the same size to ensure even cooking time.
The potatoes will absorb some of the pesto, so it’s a good idea to have extra on hand to pass at the table.
For the best flavor, buy a block of Parmesan and shred as you need it. Pre-shredded and packaged cheese will never have as much flavor.
