Scrambled Eggs:
Whisk eggs, milk & salt. Heat a non-stick skillet over medium heat with butter. Once bubbly, reduce heat to medium-low and add eggs. Allow the eggs to sit until the edges begin to set. Use a silicone spatula stirring in broad strokes until eggs are set but still loose. Remove from heat and serve.
Poached Eggs:
Fill a wide skillet with water, vinegar and salt over high heat. Bring to a boil, then lower heat so the water is barely simmering. Break eggs into ramekin and lower into the water. Immediately cover pan for 3 minutes. Transfer eggs to a paper towel-lined plate to absorb moisture. Serve with salt & pepper.
Jammy Eggs:
Set aside a bowl of ice and cold water. Bring a saucepan to a boil over high heat. Lower eggs into the water for 6½ minutes. Using a slotted spoon, transfer each egg to the ice bath. Allow eggs to sit for 10 minutes. Drain and carefully peel. Serve with salt & pepper.

Cover the pot and allow the eggs to cook for three minutes, then use a slotted spoon to remove the eggs to a paper-towel lined plate to absorb excess moisture. Ready to try making jammy eggs? Simply lower your eggs into a pot of boiling water and allow them to sit for exactly six and a half minutes. Once the timer goes off, use a slotted spoon to transfer the eggs to a bowl of ice water to stop the cooking process. Peel as you would a hard-boiled egg, then cut in half and use on top of ramen or avocado toast.
