This light, healthy and easy side dish is a delightful accompaniment to just about any dinner. The final squeeze of lemon at the end brightens this dish and provides a ton of flavor. And the beauty of cooking this lemony broccolini recipe in a braiser is that you can saute and steam in one pan.
ingredients
- 2 tablespoons extra-virgin olive oil
- 1 clove garlic, minced
- 2 bunches broccolini, thick stems trimmed
- Kosher salt
- Freshly ground black pepper
- Juice of ½ lemon
directions
- Warm the olive oil in a 12-inch braiser over medium heat. Add the garlic and saute until soft, about 2 minutes. Add the broccolini, season generously with salt and pepper, and saute, turning in the oil a few times, until broccolini begins to soften, about 4 minutes.
- Add 3 tablespoons of water and cover the pan with a tight-fitting lid. Steam the broccolini until it is fork-tender and all of the water has been absorbed, about 6 minutes.
- Remove from heat and stir in the lemon juice. Serve on a platter at once.

Broccolini is similar to broccoli, but it is thinner with longer stems. This makes it more suited to being sauteed.
If you want a little heat, you can add crushed red pepper flakes along with the garlic.
If any of the broccolini spears are particularly thick, cut them in half, lengthwise. You always want to have vegetables of about the same size and thickness to ensure even cooking time.
This lemony broccolini recipe is also delicious chopped and tossed with pasta for an easy weeknight dinner.
