  • 3-4 fresh figs, thinly sliced
  • ¼ cup ricotta
  • 1 tablespoon lemon juice
  • 1 tablespoon honey

  • 4 slices of bread, toasted
  • 2-3 ripe peaches, pitted and thinly sliced
  • ¼ cup butter
  • ¼ cup brown sugar
  • ½ teaspoon cinnamon
  • Greek Salad Toast with Whipped Feta Cheese
  • 4 slices of toast
  • 1 whole garlic clove
  • 8 ounces feta cheese, crumbled
  • 3 ounces whipped
  • cream cheese, at room temperature
  • Pitted dry cured black olives or kalamata olives
  • ½ cup cucumbers, sliced
  • ½ cup sliced cherry tomatoes
  • ½ cup arugula or preferred salad greens, finely chopped
  • 1 tablespoon olive oil (to drizzle on top of toast)

Fig and Ricotta Toast

  1. Using a whisk, whip together ricotta, lemon juice and honey until light and fluffy.
  2. Spread ricotta mixture on toast, layer with figs and top with nut pieces for a bit of crunch.

Peaches and Brown Butter Toast

  1. In a saucepan over medium heat, melt butter, stirring continuously until it turns golden brown.
  2. Turn heat to low and add brown sugar and cinnamon, stirring until sugar is dissolved and sauce is bubbling (4-5 minutes).
  3. Add sliced peaches and continue cooking another 3-5 minutes, or until peaches are soft.
  4. Serve peaches over toast and garnish with Greek yogurt or whipped cream, if desired.

Greek Salad Toast with Whipped Feta Cheese

  1. Add feta to food processor and pulse to form small crumbs. Add cream cheese and puree until feta mixture is smooth.
  2. Rub garlic clove over warm toast.
  3. Spread feta mixture on toast and layer cucumbers, tomatoes, olives and greens over feta. Top with salad greens and drizzle of olive oil.
