ingredients
- Fig and Ricotta Toast
- 2 slices of bread, toasted
- 3-4 fresh figs, thinly sliced
- ¼ cup ricotta
- 1 tablespoon lemon juice
- 1 tablespoon honey
- pistachios (slivered almonds will work as well)
- Peaches and Brown Butter Toast
- 4 slices of bread, toasted
- 2-3 ripe peaches, pitted and thinly sliced
- ¼ cup butter
- ¼ cup brown sugar
- ½ teaspoon cinnamon
- Greek Salad Toast with Whipped Feta Cheese
- 4 slices of toast
- 1 whole garlic clove
- 8 ounces feta cheese, crumbled
- 3 ounces whipped
- cream cheese, at room temperature
- Pitted dry cured black olives or kalamata olives
- ½ cup cucumbers, sliced
- ½ cup sliced cherry tomatoes
- ½ cup arugula or preferred salad greens, finely chopped
- 1 tablespoon olive oil (to drizzle on top of toast)

Fig and Ricotta Toast
- Using a whisk, whip together ricotta, lemon juice and honey until light and fluffy.
- Spread ricotta mixture on toast, layer with figs and top with nut pieces for a bit of crunch.
Peaches and Brown Butter Toast
- In a saucepan over medium heat, melt butter, stirring continuously until it turns golden brown.
- Turn heat to low and add brown sugar and cinnamon, stirring until sugar is dissolved and sauce is bubbling (4-5 minutes).
- Add sliced peaches and continue cooking another 3-5 minutes, or until peaches are soft.
- Serve peaches over toast and garnish with Greek yogurt or whipped cream, if desired.
Greek Salad Toast with Whipped Feta Cheese
- Add feta to food processor and pulse to form small crumbs. Add cream cheese and puree until feta mixture is smooth.
- Rub garlic clove over warm toast.
- Spread feta mixture on toast and layer cucumbers, tomatoes, olives and greens over feta. Top with salad greens and drizzle of olive oil.
