How to Properly Slice Steak with Laguiole Knives

  1. Before slicing, let the steak rest for five minutes to reduce loss of moisture.
  2. Locate the muscle fibers or "grain" on your steak and determine which way they run. Fibers will be easier to identify on some cuts more than others.
  3. Always cut against the grain. This breaks up the dense fibers of the meat, making it easier to chew.
  4. Slice as you eat to retain as much juice as possible.
