This warm and festive appetizer is sure to be a crowd-pleaser. Frozen puff pastry is the ultimate time-saver and makes this delicious spinach feta puffs recipe a snap. And if you have any leftover spinach filling, it makes a wonderful filling for an omelet.
ingredients
- 1 (10 ounce) package frozen spinach, thawed and thoroughly drained
- ¾ cup feta, crumbled
- ¼ cup grated Parmesan cheese
- 2 tablespoons mayonnaise
- ¼ teaspoon freshly ground pepper
- ¼ teaspoon garlic powder
- 1 sheet frozen puff pastry
directions
- Preheat the oven to 400°F. Lightly coat a 24-cup mini muffin tin with non-stick cooking spray. Set aside.
- In a medium mixing bowl, mix together the spinach, feta, Parmesan, mayonnaise, pepper and garlic powder.
- On a lightly floured work surface, roll the pastry dough into an approximately 12-inch square. Cut 24 equal squares, each about 2”x2” (see Note to make use of leftover dough). Press these into the muffin cups, taking care to press into the sides and bottom.
- Fill each muffin cup with a heaping tablespoon of the spinach mixture. Transfer to the oven and bake until the pastry is golden brown, about 15 minutes. Let cool for 5 minutes in the muffin pan and then transfer to a serving platter and serve.
notes
Don’t throw away that leftover pastry dough! To make a great snack, cut into strips, twist and brush with melted butter and sprinkle with grated Parmesan cheese or cinnamon and sugar and bake.
It is very important that you squeeze every bit of water out of the frozen spinach or your pastry will be soggy.
If you want to lighten this spinach feta puffs recipe up a bit, you can swap the mayo for plain Greek yogurt.
These are best served warm out of the oven.
