Grilling is a great way to bring out the fruit’s natural sweetness. Brushing with miso adds a great, slightly salty flavor to this dish. It’s especially delicious when paired with ice cream. When choosing peaches, select peaches that are ripe but not overly ripe so that the peach holds its shape when you grill on high heat.
ingredients
- 2 tablespoons white miso
- 1 tablespoon extra-virgin olive oil
- Big pinch of Kosher salt
- 4 peaches, halved and pitted
- Vanilla ice cream
- 2 tablespoons honey
directions
- Preheat the grill to medium-high.
- In a small bowl, stir together the miso, olive oil and salt. Toss the peaches in the miso and transfer, cut side down, to the prepared grill. Grill, flipping once, until soft but still holding their shape and with nice grill marks, 3–4 minutes per side.
- To serve, put two peach halves in a bowl, top with vanilla ice cream and drizzle with honey. Serve at once.

You can also use nectarines in this dish.
These grilled peaches are also great with a pound cake and a dollop of fresh cream.
Try chopped fresh basil on top of the ice cream instead of honey for a fun and exciting addition.
To add some crunch: try chopped walnuts, pecans or hazelnuts.
