Grilled Steak Skewers with Spicy Cilantro Sauce Recipe

This super-flavorful summertime steak skewers recipe comes together quickly and is very versatile: you can use chicken, pork, tofu or shrimp in place of the beef. Feel free to mix up the vegetables—just be sure to choose varieties that cook at about the same rate. The cilantro sauce is enough to drizzle onto the kebabs, but if you like it really saucy, go ahead and double the recipe because it is really delicious!

  • Marinade Ingredients
  • 3 tablespoons low-sodium soy sauce
  • 2 tablespoons rice wine vinegar
  • 1 clove garlic, chopped
  • 1 tablespoon sugar
  • 1 1/2 tablespoons sesame oil
  • Steak Kebab Ingredients
  • 1 1/4 lb. sirloin steak, cut into 1-inch pieces
  • 1 red pepper, cored and cut into 1-inch pieces
  • 1 yellow pepper, cored and cut into 1-inch pieces
  • 1 small red onion, cut into 1-inch chunks
  • 1 small zucchini, cut into 1-inch pieces
  • Cilantro Sauce Ingredients
  • 1 bunch cilantro, finely chopped (about 3/4 cup chopped)
  • 3 tablespoons vegetable or canola oil
  • 2 tablespoons low-sodium soy sauce
  • Juice of 1 lime
  • 1 tablespoon sesame oil
  • 1 clove garlic, finely chopped
  • 1 teaspoon freshly grated ginger
  • 1 small red chili pepper, cored, seeds and ribs removed, and finely chopped

directions

  1. If you are using wooden skewers, soak ten 8-inch skewers in water for at least 15 minutes prior to threading ingredients.
  2. In a large, non-reactive bowl, stir together all the ingredients for the marinade. Add the beef and vegetables and stir to combine. Allow to sit at room temperature, stirring a few times, while you continue with the recipe.
  3. Heat a grill to medium-high heat.
  4. To make the cilantro sauce, stir together the cilantro, vegetable oil, soy sauce, lime juice, sesame oil, garlic, ginger and chili pepper. Let sit at room temperature.
  5. Thread steak and vegetables onto skewers. Lightly spray the grates of your grill with a non-stick cooking spray and add the skewers. Grill, turning every few minutes until vegetables are fork-tender and steak is medium-rare, about 10 minutes total.
  6. Serve skewers drizzled with cilantro sauce.

The trick to kebabs is to flip them a few times when grilling. This way you give them time to cook while avoiding burning your ingredients.

If you don’t have a small red chili pepper, you can substitute ½ teaspoon of crushed red chili flakes.

You never know how hot a chili pepper is going to be until you cut into it. If you are worried that your sauce will be too spicy, start by adding half the pepper and increase from there.
