A classic paloma cocktail is made with fresh grapefruit juice and tequila. This version of the popular mixed drink gets an aromatic upgrade with simple syrup infused with ginger and thyme. A refreshing adult beverage for a warm summer day, the ginger-thyme paloma recipe easily scales up for a big batch served in a pitcher.
ingredients
- 2 ounces top-shelf blanco tequila
- 2 ounces fresh pink grapefruit juice
- 1 ounce ginger-thyme simple syrup
- ½ ounce fresh lime juice
- 2 ounces sparkling water
- Grapefruit wedge for garnish
- Ginger-Thyme Simple Syrup Ingredients:
- ¼ cup sugar
- ¼ cup water
- â…“ cup fresh ginger root, peeled and sliced
- 4 sprigs fresh thyme
directions
- To make the ginger-thyme simple syrup, place the sugar, water, ginger and thyme in a small pan. Set over medium heat, and, swirling the pan a few times, cook until the sugar is completely dissolved, about 3 minutes. Turn off the heat, and let the syrup steep for 30 minutes. Strain the syrup, discarding the ginger and thyme.
- To make the cocktail, add the tequila, grapefruit juice, simple syrup and lime juice in a cocktail shaker filled with ice. Shake vigorously and then pour into a cocktail glass filled with ice. Top with the sparkling water, and garnish with a grapefruit wedge to serve.
notes
To make a big batch of this cocktail, multiply ingredient quantities by 6, but don’t add the sparkling water until you are ready to serve.
If you don’t have a cocktail shaker, use a mason jar with a tight-fitting lid.
Fresh grapefruit juice will be best, but store-bought juice or grapefruit soda and also work.
You can make the simple syrup up to a week in advance stored in the refrigerator.
