Yogurt-Marinated Chicken and Lemon Skewers

Marinating chicken in yogurt is a pro move. It creates super-succulent and juicy chicken and helps all the seasonings stick to the skewers. While you don't want to grill these yogurt-marinated chicken and lemon skewers too far ahead, you can absolutely prep them the day before or morning of and store in the fridge to grill before dinner. Simplicity packed with flavor!

ingredients

  • Chicken:
  • 2 teaspoons crushed red pepper
  • 2 teaspoons sweet paprika
  • 1 cup plain whole-milk Greek yogurt
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon tomato paste
  • 2 teaspoons coarse kosher salt, plus more to taste
  • 1 teaspoon freshly ground black pepper, plus more to taste
  • 6 garlic cloves, roughly chopped
  • Juice of 1 lemon
  • 3 pounds boneless skinless chicken thighs and/or breasts, cut into 1¼-inch cubes
  • 1 lemon, thinly sliced
  • Yogurt Sauce:
  • 1 cup Greek yogurt
  • 1 tablespoon chopped Calabrian chiles
  • Juice of 1 lemon
  • 1 clove garlic, minced
  • Kosher salt to taste

Chicken:

  1. Combine the crushed red pepper and paprika in a large bowl, stir in 2 tablespoons of hot water and let stand for 5 minutes. Add the yogurt, olive oil, red wine vinegar, tomato paste, salt and black pepper to the spice mixture; whisk to combine. Stir in garlic and lemon juice, then the chicken cubes. Cover and chill for at least 1 hour.
  2. Preheat the grill to medium-high heat. Thread chicken pieces on skewers, dividing equally and adding some lemon slices onto the skewers in between the chunks of chicken. Discard marinade. Sprinkle each skewer with salt and pepper. Grill chicken-lemon skewers until golden brown and cooked through, turning skewers occasionally, 10–12 minutes total. Transfer skewers to a platter.

Yogurt Sauce:

  1. To make the yogurt sauce, mix all ingredients together in a small bowl, taste and adjust seasoning as needed.

To Serve:

  1. Serve yogurt-marinated chicken and lemon skewers with extra lemon wedges and the yogurt sauce. Garnish with fresh herbs and sea salt as desired.
