summary
Leveling up holiday beverages just got a whole lot more fun with the Ninja Slushi maker. These delicious boozy eggnog milkshakes make a fantastic specialty cocktail or dessert for holiday entertaining. You can easily double this recipe to make 8 servings.
ingredients
- 6 large egg yolks
- ½ cup granulated sugar
- 2 cups whole milk
- 1 cup heavy cream
- 1 teaspoon ground nutmeg
- Pinch of salt
- 1 teaspoon pure vanilla extract
- 4 ounces rum, whiskey, brandy or bourbon, optional
directions
- In a mixing bowl, whisk together the egg yolks and sugar until light and fluffy, about 30 seconds of vigorous whisking. Set aside.
- Combine the milk, heavy cream, nutmeg and salt in a heavy-bottomed saucepan and set over medium heat. Warm the mixture until it is just barely simmering—do not let it boil.
- Add a ladle of the warmed milk to the bowl with the eggs and whisk for 20 seconds. Repeat the process 4 more times to temper the eggs. Pour the egg mixture back into the saucepan and, stirring constantly with a wooden spoon, cook over medium heat until the mixture just begins to thicken, about 5 minutes. Turn off the heat and stir in the vanilla and alcohol, if using.
- Pour through a fine-mesh strainer into a pitcher and transfer to the refrigerator. Let cool for at least 2 hours and up to 1 week.
- When the egg nog is chilled, pour it into the Ninja Slushi maker and set to the Spiked Slush setting. This will take 30–40 minutes and will keep the eggnog slushie at the ideal temperature and consistency for up to 12 hours in the machine.
- When ready to serve, pour into glasses.
notes
Read the instructions on the Ninja machine before starting this recipe. The machine will work best if it has time to sit upright on the counter for a full two hours prior to use.
Save those egg whites for meringues or scrambled eggs!
Freshly grated nutmeg will always have the most flavor—a Microplane is a great tool for this.
Tempering the egg yolks ensures that they don’t scramble when cooked. Straining the eggnog removes any small bits of scrambled eggs that may have formed.
To save time, you can absolutely use store-bought eggnog.
Top your eggnog slushies with whipped cream if desired.
