Breakfast Risotto Recipe with Ginger Stewed Apples

  • 3 tablespoons butter, separated
  • 1 cup arborio rice
  • 2 apples, any variety, cored, peeled, diced
  • 3 tablespoons finely minced fresh ginger
  • 1 cinnamon stick
  • 2 cloves, whole
  • 2 cups strongly brewed ginger tea
  • 1 cup apple cider
  • 2 tablespoons maple syrup
  • 2 tablespoons brown sugar
  • ½ cup plant-based milk
  • 1 tsp kosher salt
  • ¼ cup finely diced candied ginger
  • 1 orange, zest and juice

directions

  1. In a large heavy-bottomed skillet or Dutch oven over medium heat, add 2 tablespoons of butter to the pan until melted.
  2. Add the rice, apple, ginger, cinnamon stick and cloves. Cook for 2–3 minutes.
  3. Add ginger tea a ½ cup at a time, continuously stirring until all 2 cups have been absorbed.
  4. Then add the apple cider a ½ cup at a time, continuously stirring until it has all been absorbed.
  5. Add maple syrup, brown sugar, plant-based milk and salt.
  6. Once rice is cooked al dente, and is nice and creamy, finish with the remaining butter, the orange zest and juice, and candied ginger.
