- 3 tablespoons butter, separated
- 1 cup arborio rice
- 2 apples, any variety, cored, peeled, diced
- 3 tablespoons finely minced fresh ginger
- 1 cinnamon stick
- 2 cloves, whole
- 2 cups strongly brewed ginger tea
- 1 cup apple cider
- 2 tablespoons maple syrup
- 2 tablespoons brown sugar
- ½ cup plant-based milk
- 1 tsp kosher salt
- ¼ cup finely diced candied ginger
- 1 orange, zest and juice
directions
- In a large heavy-bottomed skillet or Dutch oven over medium heat, add 2 tablespoons of butter to the pan until melted.
- Add the rice, apple, ginger, cinnamon stick and cloves. Cook for 2–3 minutes.
- Add ginger tea a ½ cup at a time, continuously stirring until all 2 cups have been absorbed.
- Then add the apple cider a ½ cup at a time, continuously stirring until it has all been absorbed.
- Add maple syrup, brown sugar, plant-based milk and salt.
- Once rice is cooked al dente, and is nice and creamy, finish with the remaining butter, the orange zest and juice, and candied ginger.
